Is there a way to just play against the CPU?

I'd just as soon learn to play on my own but the minimum number of players is 2.

Unfortunately no. If your looking to learn how to play your probably better off looking for a game against someone of your own score/rank. There is also the Society of the Cooks that would be more than happy to setup some games with you and give you some helpful hints along the way.
