it's too timeless a story, which is why i think Coppola picked the title -- to suggest that every epoch will consider it's own to be the apocalypse... the fact that it was set during Vietnam was just because that was the time in which the movie was made. to have strictly adapted Conrad's story to the time in which the story was set, would have sacrificed that timeless theme idea, that Conrad expressed in Heart of Darkness. it was an epic, and is often thought of as such by critics and those whose business it is to think about "the story" as an art form.
whereas Full Metal Jacket -- while expressing certain timeless themes, was done in a strictly historic setting. and oddly enough, i've always kind of thought of Full Metal Jacket as Kubrick's thematic sequel to Paths of Glory -- his only other strictly war movie (Dr. Strangelove doesn't really count as a war picture).

Here's a good one to add to the list: 84 Charlie MoPic Easily the most realistic film set in Vietnam I've seen, doesn't rely on any star power, and a new take on traditional Vietnam cinema.
I hold to my belief that Apocalypse Now, while a positively brilliant cinematic adaptation of Conrad, had nothing to do with the war in Vietnam, and thus should not be compared with the other movies discussed herein.

What adds to Platoon's cause is the fact some events in the film really happened which included the director the soldiers raping the girl and him stopping it, him firing shots at a villagers feet. We were soldiers had a point to make but unfortunately it was ruined a bit by Mel Gibson.(not dissing him though).

hard to choose. Apocalypse is cinematically wonderful, Platoon is probably the most Vietnam of the Vietnam war films if you get my drift and Full Metal Jacket simply has some of the greatest dialogue ever in film.

It's concerns the Vietnam war in a tangential way, but some mention should be given to Jacobs Ladder. There are very few movies that deal with psychological post-war afflictions, and in fact, if you look at it going back to the Novel, Rambo is really about a guy with PTSD... they just turned it into a comic franchise to turn a quick buck.
Also, not a cinematic masterpiece, but one you could really feel the "worms eye view" of the fighting was Hamburger Hill.
And I think "We Were Soldiers" has some underrated dialogue, like the following:
