How do players who dont leave their original territory keep gaining spoils? Like in a feudal epic match for example.

that specific map allows for bombarding..
this is taking from the instruction/ gameplay notes
Some maps allow a special type of assault called bombardment. Bombardment doesn't allow you to conquer once the opponent's forces are destroyed, instead it converts the opposing region to neutral.
so if i stand on a place i can bombard, i will bombard is succesfully once. then end my turn and get a spoil. its a great way of conserving troops since you dont have to actually send one man down there. and still get spoils. and because the country is/remains neutral you can do it over and over again.

this is a key strategy in feudal maps. if you notice, experienced players don't move their stack from their castle until many rounds into the game.

Also useful in new world and WWII Poland.

bombardment as stated above allows players to neutralize a territory from afar or close from whatever it is, to a "1 neutral" or whatever the "killer neutral" is suppose to be. since bombardment means taking out, it gives you a spoil for doing " damage/taking out"
