A good steak that is prepared well does NOT NEED a sauce, imo. The flavor should be from the meat itself and the cooking process. I prefer to cook a good steak over a charcoal fire and flavored with hickory wood chips. Sometimes I will mix cherry and hickory; pecan and hickory, again about in equal parts, is a good flavoring technique (from the smoke) that I prefer.
