For me the battle is this...

50 First Dates vs The Truman Show

Honestly, I think Jim Carrey is a much better actor. Adam Sandler is pretty much himself (or a funny version of himself) in every movie. I don't recall him ever going really out there for a role. Jim Carrey has several times.

I find myself enjoying Adam Sandler more than Jim Carrey though over a prolonged period of time.

gotta go with Jim Carrey, Truman Show, Cable Guy, i loved those movies,
Adam Sandler is better when you want to watch something without having to think, ie water boy, happy gilmore and billy madison.

I'm pretty sure there's a lot more to life than being really, really, ridiculously good looking. And I plan on finding out what that is.

Jim Carrey has proven he is an infinitely more diverse actor than Adam Sandler, who has been type-cast for all of eternity, but I think they are both extremely talented actors.
