Good question. I never thought we'd get so many forfeited games....
So far I have used the Tournament Stats script to get the winning percentage, so then they wouldn't show up. So, I guess they don't count as wins. However, if needed I will count them towards the amount games played for the players that did join them, if that would come into play.

If anything, I'd do it the other way around ... If you don't join a game (cause a forfeit) that should definitely count AGAINST you for MVP status.
If you gain from a forfeit, it shouldn't count toward MVP status. Some may say that's unfair to the player who signed up for the game. But remember, MVP is about gaining points for your team. So you can just redistribute the games in future rounds. If someone is really going for MVP, they can take on a couple more games to make up for any of their other games not played. This seems most fair to the teammates. The one player shouldn't benefit simply because they got lucky and received a forfeit.
As an alternative, I would either count BOTH forfeited losses AND wins toward MVP. OR I would run both scenarios. If the MVP calculation comes out different (lots of times it won't) when counting forfeited WINS or not counting them, then the team can vote for which one is the MVP, with any ties being broken by the team leader. (Or if the team leader is in the runnning, maybe the player that played the most total games, or the next player in total games if the most prolific player is also in the running).
