You play them exactly how you would play a team game. Depending on the map, the settings ( trench/escalating/unlimited etc) the way of playing them can change a lot.
One thing you must always consider is turn order. For example it is often interesting to fort the player playing right after ( red fort green, green fort blue, blue fort red if you are playing poly(3)). Also true for attacking, often try to reduce the player playing just after you. For example if you are playing poly (4) on WWII Europe, every player start with 12 regions, if you attack the player playing right after you, he'll have 11 regions and deploy only 3. Turn order is very important in polymorphic game ( and team game as well it play exactly the same way).
I'd advise you to try to find a good teammate, and practice team game, if you are good at team games, then you should be good at polymorphic games.

well, this makes sense in one way... however, i mightily disagree... to be a part of a great team, you need to be able to make the hard choices that sometimes your team member does not agree with, after a discussion... you also need to be able to take the lead and/or follow, depending on your position on the map... following does not happen in poly. taking other peoples thoughts into consideration does not happen. democracy does not happen. you have to be a cold blooded killer that is ruthless!!!! i understand where you are coming from, but i find poly to be much more difficult than simple team games... the black jesus has spoken...-Jésus noir

Debatable which one is harder. Both are tricky, but I think most people have a harder time figuring out the bonus structure on Bamboo Jack than on Gallipoli.

Exactly. I've played BJ a few times now and find both the look and feel of it impenetrable.
Play Galipoli once or twice and you'll have the map down.
